Girl Scouts of Middle Tennessee CEO featured in Tennessean

Agenia Clark, CEO of Girl Scouts of Middle Tennessee was featured in The Tennessean today as part of the paper's Nashville Cooks series.

"Clark’s focus on good health serves as a reminder that the Girl Scouts organization, which celebrates its 100th anniversary this year, is much more than cookies. The group offers age-specific and educational paths called journeys — some with a food focus. While Brownie Scouts might learn to make a snack, Ambassador Scouts in the 11th and 12th grades learn to make a meal. Journeys also teach nutrition and important definitions such as what it means for food to be grown organically. "

In the article above, Clark shares some of her favorite recipes including "Thin Mint Parfaits" using the Girl Scouts' Thin Mint cookies. If you would like to sample this delicious treat yourself, all you need are the following:

-About 16 Girl Scout Thin Mint cookies
-1 recipe chocolate pudding (or store-bought)
-Whipped cream
 
1. Crush Thin Mint cookies and set aside.
2. Place about 3 tablespoons pudding each at the bottom of 4 tall glasses. Place 2 tablespoons crushed Thin Mint cookies on top of pudding, then 2 tablespoons whipped cream on top of cookies. Continue layering the three ingredients, ending with whipped cream. Chill parfaits for
10-15 minutes. Garnish with additional cookie or fresh mint if desired.
